Mini Chocolate Glazed Donuts

Happy Valentines Day everyone! I hope you are all enjoying the day with your special someone 🙂 Every year I try to make something unique when Valentines Day comes around. This year, I chose to go with donuts! I have to admit that I was quite intimidated at the thought of making donuts since they are new to me. But let me tell you.. I am now obsessed with them!

You’d be surprised at how simple they really are! I recently ordered a mini donut cavity online from Amazon (here) and I am super impressed! It eased the baking process and the mini donuts popped right out at the end 🙂 I chose to go with a simple chocolate donut paired with a pink cream based glaze to go with the Valentines theme.

Here’s What You’ll Need: 
– 1 cup all purpose flour
– 1/2 cup granulated sugar
– 1/4 cup cocoa powder
– 1/2 tsp baking powder
– 1 tsp baking soda
– egg replacer (1 egg)
– 1/3 + 2tbsp buttermilk
– 1/8 cup sour cream
– 1 tsp vanilla extract
– 1.5 tbsp unsalted butter, melted

For the Glaze: 
– 1 cup confectioners sugar
– 1.5 tbsp unsalted butter, melted
– 4 tbsp half and half cream
– 1 tsp vanilla extract
-2 drops red food colouring
– sprinkles (decorative)

*Preheat your oven to 350 degrees

Ingredients for the donuts

1. In a medium sized bowl, whisk together the flour, sugar and cocoa powder. Be sure to eliminate any clumps in the flour/cocoa. Mix in the baking powder and baking soda. Set aside.

2. Melt your butter in a small sauce pan and allow it to cool. Now its time for the Egg Replacer… This is the first time I’ve ever worked with egg replacer and it was awesome! For one egg, you combine 1 tsp of the powder with 2 tbsp water and mix well. Its as simple as that! I will definitely be using this more often. You should be able to find it in select grocery stores in the gluten free/vegan/baking isles 🙂

Combine the buttermilk, sour cream, vanilla and egg replacer. Whisk well. Add in the cooled melted butter and whisk all together.

Combined 1 tsp powder + 2 tbsp water

3. Grab a baking spatula and gently fold the wet mixture into  the dry ingredients. Be careful not to over mix! Fold just enough to make sure the flour pockets are gone.

4. Butter and flour your mini donut cavity to assure no sticking. Place the donut batter into a zip loc bag and cut a small hole in one of the bottom corners. This will ease the process of transferring the batter to the cavity. Fill about 2/3 of the way in each cavity.

5. Place in the oven and allow them to bake for 8-11 minutes. Be careful as they will burn quickly! Now its time for the glaze. Combine the confectioners sugar, melted butter and cream in a small bowl. Whisking will ease the process. Pour in the vanilla and red food colouring. Add more if you would like the colour to be darker! Set aside.

6. Remove the mini donuts from the oven and allow them to cool. Transfer them over to a wire rack and begin the decorating process! Dunk the donuts into the glaze and pour over decorative sprinkles. Allow the glaze to fully dry before plating! Hope you enjoy 🙂
